Difference Between Pastry Chef And Baker

Homemade Beer - Bitter E + G - Pt I - The preparation of the must



Yes, we ventured, as announced in creating a Bitter method with Partial Mash (extract + grains).
We are armed with pots, tea towels, clothes e. .. knee-high nylon! ;)
all begins with the infusion of grains: 60 minutes in water previously brought to 68 °.
60 minutes during which we dissolved and boiled malt extract, immediately cooled and made
rest in the fermenter.



Once past the hour infusion of grain aggregates, we transferred all in the pot to act wort boiling, taking care to filter out the grains with a cotton cloth and wash them, then with water to 68 degrees.


With the must have proceeded to the boiling hops, adding malt extract 500grammi previously set aside.
In the absence of adequate hop bag, and in order not to filter the juice again, we have the innate with nylon socks to put the hops in boiling.
The first hop should be made to start boiling, the second after half an hour and the third after 50 minutes.
Each hops give the beer respectively: the bitterness, flavor and aroma.


After boiling for 60 minutes must have cooled, poured into the fermenter where we had previously put the malt extract and bring it to 23 liters by adding water at room temperature.
The thermometer marks already the right temperature to measure the initial density and to inoculate yeast. A pretty mixed and away: the closed fermenter, put the bubble, and we await the first signs of fermentation, accomplice the favorable temperature, there were almost immediate! To date six days that the Bitter gurgles with a certain arrogance ... we expect quiet the tumultuous phase for transferring the second fermenter.

The foam is more persistent than the cerevisiae, and honey has given it very pleasant floral perfume! Even for Marilyn I think a few more days to maturity will greatly enhance the intensity of flavor and body, as a Pils we can not expect much more than that!

Hello dear friends, excuse for inaction, but unfortunately does not come home yet and the dsl at the office before I went to my husband to follow the blog. Now working I can not update it daily and that I regret a lot! A technician in my town told me, however, that within a month so I should fix it from home, perhaps at the evening conversing with you! What about my new job: great! our Pils is finally ready!
After two weeks of fermentation in the bottle cerevisiae is ready for tasting!
It has a beautiful amber color the clear and dense foam, but not very persistent. Perhaps
to mature a little more '! ;)
The nose has strong hints of yeast, but the flavor is more delicate, more "Pils."
A beer to accompany hors d'oeuvres, appetizers and pizza, but also good and refreshing on its own!


We update the guide tomorrow for the tasting version of the "two": the Marilyn, fermented in the bottle with honey and lime, which is in the fridge waiting for us for dinner ... :)

BQ Milan - Craft Beer Quality

After all heard good things, we decided to try the BQ.
A room in Lausanne Road 36, in Milan, which boasts the beauty of 20 pins and 4 pumps, all supplied with quality craft beer.

Hello everyone:) After we
ventured into the production of pilsner malt hopped , the next test will be a bit more difficult: a produced by a method of Bitter Partial Mash. We

"First we have to grind coarsely specialty grains.
Heat to about 68 to 70 degrees about 5 liters of water and once it reaches the desired temperature, soak the beans, leave to infuse for 30 to 60 minutes.
After this time filter out the grains with the colander, and rinse the grains (the grains are ground and cooked) with hot water at 70 degrees, the amount of water to rinse the grains should be about 3 to 5 liters. (This procedure is called sparging).
Dissolve the extract in the wort just obtained, and raising the volume of water required by the recipe, put on the fire and boil the mixture.
After 5 minutes of boiling, add hops in the doses specified by the recipe, the first hop that gets used to the aroma, and usually has to boil 60 minutes, depending on the recipe, you add two more doses of hops , about 30 minutes to boil and boil 10 minutes from the end, this division in three additions of hops used to give beer respectively AMARO, aromas, perfumes.

Our recipe for Bitter because we like to experiment, will surely be enriched with some spice or herb .......... but more likely will involve the use of Oak Chips Medium Toast: French oak chips medium toast, which, added to the beer maturation, allow to obtain the typical aromas of aging in oak casks.

Good weekend to all dear friends! Today I want to tell you about my mishap in the kitchen going back two years ago. You should know that my mom used to a life in a pressure cooker and a few years ago, I bought one too, driven by its positive reviews, "you'll see that time savings" and kept telling myself so I relented. After a few attempts, I thought to cook the lentils. I have placed in the pan with a little bit 'of water and some odor, I closed the lid and the fire. After a while, 'he began to whistle and I diligently I lowered the flame! After a few minutes of rain lentils! As bullets flew all over the kitchen and kept out of all the holes in the lid. Final result smeared kitchen, valve cover game and dinner in the high seas. From that day the pressure cooker has been relegated to just a memory in mobile ... until the other day! My sister is back on proc with the merits of this blessed pot, and I for the second time I gave in! I did fix the cover and the man in the hardware store told me that I probably put too many lentils during cooking and that they swell and then were turned into bullets!! Last night I tried to cook the meat loaf and surprise ...... delicious! It took very little time and the result was mouth-watering!
